Kolkata street food Egg Roll or Egg Wrap

In early 1900’s Nizam came with Rolls and gradually it became a very popular street food in Kolkata. Various improvisations have been done in modern times on mutton, chicken, egg and vegetable versions. People keep improvising and young & old everyone enjoys this famous Kolkata street food. I prepared Egg Roll or Egg Wrap today afternoon.

Serving : 3 people

Preparation time : 10 mins

Cooking time : 25 mins

Ingredients – 3 eggs

Maida or All Purpose Flour – 200 gms

Green chillies chopped – 3-4

Medium size onion chopped – 1

Black pepper powder – 1 Tbsp

Turmeric powder – 1/2 tsp

Lime juice – 1 lime

Oil to fry – 1/4 cup

Salt as per taste

Method

In a bowl break the eggs and add black pepper powder, turmeric powder and salt. Beat well. Set aside. Take the Maida in a bowl and add 1/2 tsp oil and pinch of salt and knead the dough. Make 3 balls and with a rolling pin roll into round shape. In a non stick pan heat oil and add 2 Tbsp of the beaten egg. With a spatula spread it widely and let it fry for couple of mins. Add the round maida bread and set it for 1-2 mins. Flip. Fry the other side. Make the other two balls with the remaining beaten egg. Now for adding the chopped onions and green chillies. Spread the fried egg and add fee chopped onions and green chillies in one side and roll. Fix it with a toothpick and plate it. Garnish with onion rings on the sides and enjoy hot
