Aam Payesh or Mango in Rice Pudding

Rice Pudding is a traditional cuisine of India and every state has its own method of making. Mango being in season now adding mango in Rice pudding is something which came to my kind since the past few days. I’ve been wanting cook mango in rice pudding and immediately came up with this cuisine which is easy and very tasty. All Indians across the country crave to have mangoes in the summers and mango being King of all fruits there has to be various cuisines to make with mango. Easy recipe follows. Serves – 3 people

Preparation time – 35 mins, Cooking time – 30 mins

Ingredients

Milk – 500ml

Gobindo bhog rice – 50 gms

Sugar – 3 Tbsp (can reduce or increase sweetness as per preference)

Bay leaf – 1

Cloves – 1-2

Green cardamom – 2-3

Mango – 1 whole peeled, sliced and purée

Method

Wash and Soak the rice in a bowl for 30 mins. In a wok heat the milk until it reduces in half and add the rice and keep stirring as the bottom might stick. When the rice is 3/4th done then add bay leaf, cardamom, cloves and stir well. Add sugar and keep stirring. Once the rice is cooked set aside to cool completely. Once cooked add the mango purée and put it in a bowl. Add chopped pistachios and few strands of saffron. Add some sliced mangoes and enjoy chilled

Scoop the mango and make a purée
Boil the milk
Rice pudding is done
Add chopped mangoes, saffron and chopped pistachios
