Mango Pudding

Mango being King of fruits and one of my favourite fruit I have to make in this season a dish with mango. Tonight it’s a dessert and it’s Mango Pudding. I love Pudding a lot and making Mango Pudding is easy and definite try for my readers and fans. I can make different dishes with mango each day and not get tired. Serves – 4

Preparation time – 30 mins, Cooking time – 30 mins, To set refrigerate – 3 hours

Ingredienga

Milk – 500 ml

Alphonso Mango – 1 big one

Gelatine – 1 Tbsp

Egg yolks – 3

Sugar – 3 Tbsp

Method

Break the eggs and separate the yolks. Set aside. Wash the mango and make into a purée. Add the gelatine in little water and keep aside for 2-3 mins. In a pan add to the milk egg yolks, sugar and bring it to flame. Keep it in medium range and keep stirring until the yolks and sugar dissolves. Add gelatine which has risen by now and slowly stir until the gelatine dissolves. Set aside the milk and bring it to room temperature. Keep stirring to let the mango mix well. Pour the mix into fancy bowls and refrigerate for 3 hours. Once the pudding sets in garnish with some mango pieces and chopped pistachios. Serve chilled

Ingredients of mango purée, milk, gelatine, egg yolks
Put little water to gelatine and set aside 2-3 mins
Keep stirring the milk with egg yolks, sugar
Add mango purée and keep stirring
Enjoy chilled
