Breakfast is the most important meal of the day and if it can be healthy food then the day is made. Eating healthy should be a conscious decision of oneself. To discipline oneself is not easy but sure somewhere one can start and make it a point to continue. I started my most important day meal with a healthy breakfast. I chose Millet as the base. This grain is tasty and easy to cook. Some vegetables that are easily available at home are the only things you need.
Serves – 2 people, Preparation time – 15 mins, Cooking time- 15 mins
Ingredients
1/2 cup millet washed well
1/2 cup vegetables of carrots, beans, capsicum
2-3 green chilli slit
1 small onion chopped fine
1/2 tsp garlic chopped fine
1/2 tsp ginger chopped fine
1/2 tsp turmeric powdet
1/2 tsp cumin powdrt
1/2 tsp coriander powder
1 egg
1 cup water
1 Tbsp canola oil
Salt as per taste
Method
Soak the millets for 10 mins. Chop the vegetables as per your desired shape. Set aside. In a wok heat oil, add chopped garlic, ginger and slit green chillies. Stir for a minute. Add chopped onions, veggies and add turmeric powder, cumin and coriander powder and stir for couple of mins. Add salt and stir. Add water. Cover and keep on low flame until the water is absorbed and the millet is cooked. Make a egg poach and top it. Enjoy š
