Tonight I just wanted to have soup and a simple soup. Soups are always my favourite and a Vegetable Noodle Soup was an ideal one for me
Serves – 2 persons, Preparation time – 10 mins, Cooking Time – 15 mins
Ingredients
1 medium size onion chopped fine
2 medium size potatoes cut into small pieces
1 bay leaf
1 tsp whole black pepper powder
3-4 Tbsp butter
1 cup vegetable ayoxk
1 cup water
1/2 cup noodles
Salt as per taste
Method
In a non stick wok heat butter and fry the onions until golden in colour. Add the potatoes and fry for 2-3 minutes. Add bay leaf, black pepper powder and salt. Stir. Add vegetable stock and cover on low flame. After 10 mins add noodles and more water is needed to cook the noodles. Cover for 5 mins until cooked. Plate it and add a toast to enjoy the soup hot
