Yoghurt and Cucumber are very close to my heart and to make it in a soup is the ideal food for me on Sunday. This Soup has the goodness of Cucumber, Yoghurt, light cream, White wine vinegar. This special soup has no heating involved and is served chilled so this Soup is ideal for the peak Summers that we are in India. Homemade Yoghurt is always the best one and most nutritious one. I used homemade yoghurt here
Serves -1 person
Preparation time – 5 mins, Cooking time-10 mins
Ingredients
1/2 cup homemade yoghurt
1/4 cup light cream
1 Tbsp white wine vinegar
1 large cucumber
1 garlic cloves grated
1-2 sprig mint leaves
Salt as per taste
Method
Grate the cucumber and set aside. In a bowl add the grated cucumber and add grated garlic, yoghurt, light cream, white wine vinegar and mint. Mix well and refrigerate in a sealed container for 2 hours. When serving in individual bowls add some toasted bread on the side and spread some mint leaves. Enjoy!
