Rose & Pistachio Mahalabia

Rose & Pistachio Mahalabia is a dish from Middle East / North Africa eaten during Ramzan. A milk pudding which only has four ingredients of milk, corn starch, Rose water and honey. A extremely tasty dessert enjoyed with Mint Tea. I just fell in love with the recipe when I saw in a book and decided to do even if Ramzan is over. A light dessert and not so sweet it was an ideal dish for me. I love Rice Puddings a lot and having had Rice Puddings in India I wanted to try something different and this milk pudding is ideal

Serves -2 people

Preparation time – 10 mins, Cooking time-20 mins

Ingredients

500 ml milk

75 gms corn starch

3-4 Tbsp honey

3-4 Tbsp Rose Water

Pistachios to garnish and dry rose petals too

Method

In a bowl sieve the corn starch. Add 1 Tbsp milk at a time and whisk. Keep whisking until all corn starch is well mixed. Add honey and Rose Water and put on slow flame. Keep stirring until the milk is thick and fully set in. Set aside and pour into ramekins. Cover with cling film and refrigerate for four hours to maybe overnight. Enjoy with garnishing chopped pistachios and dry rose petals. Don’t forget to have a Mint tea as it’s goes very well

Corn starch sieved
Add milk slowly and keep whisking
Add honey and Rose water
Ready to put on slow flame
Enjoy with mint tea
