Olive oil fried egg and hummus on toast

Who doesn’t like hummus? It’s one of the most healthy dish that I know of and love it to the core. Today morning I planned to have Olive oil fried egg with hummus on whole wheat bread for my breakfast. Breakfast being the most important meal of the day, one should eat healthy and nutritious. I just did that. Though I didn’t bake the bread nevertheless the breakfast was yumm. I made the Tahini sauce too and so much better, healthier than a store bought. So how about me sharing the recipes for both. Let’s begin

Serves -1

Preparation time -24 hours plus 20 mins, Cooking time-30 mins

Recipe for Tahini Sauce

Ingredients

1/2 cup white sesame seeds

Olive oil as per requirement

Salt as per taste

Method to make Tahini Sauce

In a non stick wok on slow flame roast the sesame seeds ensuring it doesn’t turn brown as sesame seeds does turn brown very quickly. Set aside. In a food processor add the roasted sesame seeds and churn for 2-3 mins to see whether its coarse. Then add olive oil and salt and run the food processor for another 1 mins. Once smooth set aside. Can keep this in air tight container for 1 week.

Tahini sauce

Ingredients for Hummus

1 cup chickpeas (I didn’t use canned as I prefer fresh ones)

1/4 cup olive pil

1/2 tsp cumin powder

1 lime juice

1 small garlic clove chopped fine

Salt as per taste

Method

Wash and add the chickpeas in water overnight. Next day don’t discard the water and instead set aside the water. In a food processor add the chickpeas, tahini sauce, cumin powder, lime juice, chopped garlic, olive oil and less salt as Tahini sauce already has salt and half of the chickpeas soaked water and run the food processor until the mix is smooth. May take a little time. Check the consistency and if thick then add a little water. Run the food processor again and pour the mix in a bowl and set aside. Heat olive oil in the wok and break the egg to make a fried egg. To set it cover it or if you prefer runny then set aside from the flame. Toast the whole wheat bread and apply the Hummus like butter and set the fried egg on it. Sprinkle a little salt and black pepper powder and enjoy a healthy breakfast with a cup of tea or coffee
