I’ve fallen in love with hummus and have started trying to eat with various combinations. Today morning for breakfast I made scrambled eggs which is also my favourite adding hummus on toast. What a classic breakfast it was.
Serves -1 person
Preparation time -5-7 mins, Cooking time-10 mins
Ingredients
2 eggs
2 slices of whole wheat bread
1 medium tomato chopped finr
1-2 garlic pods chopped fine
Few basil keaves
3-4 Tbsp hummus
Black pepper powder as per taste
Salt as per taste
2-3 Tbsp olive oil
Method
In a bowl add chopped tomatoes, chopped garlic and chopped basil leaves. Add salt and pepper and set aside. In a bowl break the eggs and whisk so it looks like froth. In a non stick wok add 2 Tbsp olive oil and add the eggs and keep stirring frequently for a scrambled egg. Set aside. In the same wok add 1 Tbsp olive oil and toast the breads and set aside. Add the hummus on the two toasts real thick. Add the tomatoes with garlic and then the scrambled eggs. Add salt and pepper and enjoy the healthy non junk breakfast
