Spinach Borani Dip

Dips are many kinds and variations are all unique. Today I made a unique one for dinner where the baby spinach is mixed with yoghurt and lot of olive oil is drizzled. Eaten cold and with Indian bread or Roti. I tweaked this recipe to suit my Indian taste ie instead of using Pita Bread I used Indian bread but the taste of the dip was heavenly.

Serves -2 people

Preparation time-10 mins, Cooking time-60 mins


1 cup yogurt

2 cups baby spinach

Few sprigs of mint leaves chopped

1-2 pods of garlic chopped fine

6-7 Tbsp olive oil

1 tsp pistachios chopped

Salt to taste


Wash the spinach and drain excess water. Blanch the spinach and drain excess water. In a bowl whisk the yoghurt well and add little olive oil. In a non stick pan heat olive oil and fry the chopped garlic and add the yoghurt. Sauté for 2-3 mins. Set aside. Cool and drawing excess water. Add to the yoghurt and mix well. Add chopped mint leaves and olive oil. Add chopped pistachios and enjoy with Roti or Pita bread

Borani Dip
Whisk the yoghurt and add olive oil
Wash, blanch spinach and drain excess water
Add some chopped garlic to yogurt
Add spinach to yoghurt
Mix well
Drizzle olive oil, chopped pistachios and mint leaves and refrigerate for 30 mins. Enjoy with Pita bread or Roti
