Egg Delight

I love eggs and on Sundays I crave to cook eggs in different styles. Infact every Sunday I think about what different breakfast I’ll cook which will have eggs. So I thought to myself that earlier I cooked eggs in capsicum and on bread, then an idea cane to my mind to cook eggs on thick onion rings and I just did that. It was a novel idea and loved every bit of my brekky

Serves – 1 person

Preparation time – 10 mins, Cooking time-15 mins

Ingredients

2 eggs

2 slices of bread

2 large onions

1 medium size tomatoes

1/2 tsp turmeric powder

1/2 tsp red chilli powder and some to garnish

2 slices of cheese to grate

2 Tbsp canola oil

Pinch of Black pepper powder

Salt as per taste

Method

Make thick rings of the onions and chop the rest. Cut the tomatoes to small pieces. In a wok heat oil and add the chopped onions and soften. Add tomatoes and turmeric powder and red chilli powder, salt and black pepper powder. Cook until oil leaves surface and set aside. In the same wok add oil and add onion rings. Fry a little and gently break the eggs to make poach. Keep it runny. Sprinkle red chilli powder and set aside. Toast the bread and add grated cheese. Place the eggs on the bread and enjoy

Enjoy the Brekky
Ingredients
Fry the onions and soften
Add the tomatoes and turmeric powder, red chilli powder
Place the eggs on the onion rings
Enjoy on toast
