Barfi is a special kind of Indian dessert that is very popular in India all across the country. Basic base is milk and cottage cheese but in modern times lot of improvisation is done. I made with Mango and added grated coconut with it to raise it to next level. Mango being the King of fruit, what better way to improvise. Adding grated coconut gave a different texture and flavour. It’s soft, spongy but not sticky. I am happy I am sharing the lovely recipe with my foodie friends

Ingredients
3 cups coconut grated
1 cup mango puree
1 cup milk
1/2 cup sugar
1 Tbsp cardamom powder
Method
Wash, peel and cut the mangoes. Put in a blender and make a purée. Add milk and make the purée more smooth. In a wok add mango purée and add sugar and stir very well until sugar dissolves. Add grated coconut and stir very well until the mango is thick. Continue stirring for a further 15 mins on medium flame until coconut mango mix will be separate from the pan. Add cardamom powder. Stir. Transfer the mix into a greased plate and let it cool completely. Cut the mango into squares and enjoy
