Watermelon Rind Halwa

Watermelon is a fruit which has many usage and rind is one of them. The rind can be used to cook a veggie, can be made into Chutney and can be made into a Halwa or an Indian dessert. Halwa is a very ancient form of dessert that has been in India since many years now. Every part of India cooks Halwa in a different way. Some make it more sweeter than other. Enjoy the recipe

Ingredients

1 cup watermelon finds cut into pieces

1 cup milk

1 Tbsp ghee

1 Tbsp besan or chickpea flour

1 Tbsp sooji or semolina

1/2 tsp cardamom powder

1/2 tsp jaiphal

1/4 cup sugar

Method

Peel the skin of the watermelon and cut. Just near the edge of the watermelon cut into pieces and make a purée in a blender. In a wok heat ghee add besan or chickpea flour, sooji or vermicelli and stir for 2-3 mins until it changes colour and an aroma is there. Add the purée and stir for 10 mins and once a little thick in consistency add milk, and stir for 15-20 mins for a thick consistency. Add cardamom powder and jaiphal and stir well. Add chopped almonds and pistachios before playing. Once plating is done and garnish again with chopped pistachios and almonds and enjoy
