Ma’mouniyeh/ Wheat cream Pudding

Ma’mouniyeh is a ancient and traditional wheat cream pudding from the Middle -East. It is said that it’s named after 9th Century Caliph Ma’moun. Very easy, simple yet delicious to eat recipe. I love trying cuisines from all over the world and desserts of Middle East which I’ve been cooking of late is very interesting, delicious to eat and simple to make. Specially the rice puddings are quite similar to Indian ones. This dessert is best enjoyed during breakfast

Serves -4 people

Preparation time -10 mins, Cooking time-20 mins

Ingredients

1 cup semolina or wheat flour

3 cups water

1.5 cups sugar

4 Tbsp orange blossom water or saffron dipped in there

4 Tbsp unsalted butter

Roasted almonds, roasted pistachios chopped fine for garnish

Method

In a bowl add water and sugar and bring it to boil on high flame. Let sugar dissolve in few minutes, then add saffron water and set aside. In another wok heat butter and add semolina flour or wheat cream flour and keep adding the syrup and whisking until all syrup is used. Set aside and garnish with roasted almonds. and roasted chopped pistachios. Eat hot
