Khaja is a very special dessert of the Eastern part of India specially in Odisha & West Bengal state in India. On the occasion of Guru Poornima which happens to be today I made for the first time and it’s a major hit with me. I do have a sweet tooth and having been able to make Khaja made my day special. It’s a fritter fried in oil and dipped in sugar syrup. It has many layers and while taking a bite one really enjoys the crunch & crispy part inspite or dipped in sugar syrup

Ingredients
1 cup maida
1 Tbsp oul
Pinch of salt
1 Cup sugar
1/2 cup water
1 green cardamom
Oil to fry
Method
In a bowl add sugar and water and stir. Bring it to slow flame and keep stirring until sugar is dissolved and syrup is threadlike. Set aside once syrup is done. In another big bowl add Maida, salt and oil and with little water make a dough which should neither be soft nor hard. Keep it covered with a Muslin cloth for 15 mins. Beat the dough again and make 5 balls out of it. With a rolling make thin Roti like and set aside. Once all done then place one Roti like, grease with oil, dust with maida and place the second one on top of it. Place the third and fourth and fifth the same way and once done ensure all sides are tightly closed. Roll in a tight way until the end. Cut one side of the roll and with a knife cut 7 parts. Press one side of your palm on the roll and then with a rolling pin press a little. Set aside. In a wok heat oil but reduce the flame and once oil is heated fry the Khaja slowly. Each side 2-3 mins. Flip with a tong. Once all are done set aside. Dip individually into the sugar syrup and set aside. Enjoy Khaja
