Millet is such a grain that is so nutritious to have for as breakfast. I just did that and thinking about how I should go about making, thought of doing it will coconut milk and coconut meat. I don’t have Millet for breakfast often but when I do I really enjoy. The other day it was just a stir fry and a poached egg on top. That turned out yumm. Coconut is something I love and I toasted the meat and used coconut milk to cook the millet which was so tasty to eat. Friends, do try this healthy recipe

Ingredients
1 cup millet
2 cups water
1/2 cup coconut milk
1 Tbsp shredded coconut meat
1 Tbsp vegetable oil
Kosher Salt to taste
Basil leaves to garnish
1 lime juice
Method
On a saucepan toast the shredded coconut meat for 1 min and set aside. In a saucepan heat oil and add millet. Roast for 3 mins and set aside. In a bowl add water to coconut milk and bring it to heat. On slow flame boil it. Add it to the roasted millet and keep stirring until the millet absorbs the coconut milk. Set aside. Add lime juice and chopped basil leaves and use a fork to stir it. Pour on a bowl and enjoy a warm one.
