Mutton Bihari style

All states in our country has mutton cooked in different styles and each is unique in every way. I plan to cook all styles but it’s never easy because the country is so big that probably it’s going to take a lifetime for me to just finish cooking all states styles of mutton 😄…. a joke. This particular one is of great interest to me as I have a deep root connection with state of Bihar both from my parents side. So here follows the recipe 😊

Course – Main Meal

Serves -2 people

Ingredients- 400 gms mutton

2 large onions chopped

1 large tomato chopped

1/2 cup yogurt

1 Tbsp ginger paste

2-3 garlic pods

2-3 whole red chilli

1/2 tsp cumin seeds

1/2 tsp coriander powder

1/2 tsp turmeric powder

1 tsp whole garam masala (cinnamon stick, cloves, green cardamom)

Salt as per taste

3-4 Tbsp fhee

1 Tbsp mustard oil

1 cup water

Coriander leaves to garnish

Method

In a bowl add chopped ginger, chopped garlic, whole red chillies, cumin seeds and coriander powder. Blend and add that to the yogurt, marinate the mutton with this mix. Set aside for 1 hour. Chop the onions and tomatoes. In a pressure cooker add mustard oil and ghee and the chopped onions. Fry well until pink and soft and add the mutton mix. Stir very well. The oil should leave surface. Add chopped tomatoes and mix well. Add water and give one stir. Put on 3-4 whistles on low flame and the mutton is cooled. Enjoy with steamed rice

Washed Mutton
Make a paste of ginger, whole red chillies, garlic, coriander powder, cumin seeds
Add it to the yoghurt
Mix well
Mix it with Mutton
Ingredients
Chop the tomatoes, onions
Fry the onions in oil & ghee
Add the mutton
Add the spices and stir
Add the chopped tomatoes
Add water and stir
The mutton is done
