During my travel to Spain I fell in love with Tortilla de Patatas. Loved variations of it too in Spain specially Madrid and Barcelona. For my Sunday brekky I wanted a Kingsize one and Tortilla de Patatas is the best choice. I didn’t change the method to cook at all and cooked exactly the way I had seen my Spanish friend cook at her home in Madrid and when she visited me in 2015 in India.

Ingredients
4 eggs
1 large potato
1 large onion
1 cup extra virgin olive oil
Salt as per taste
Method
Wash the potato and onion. Peel the potato and cut in halves and then quarters. Cut on breadthwise but not thick or thin. In the sauce pan on medium heat, heat the oil and add the potatoes. Add salt. Stir and keep frying. In between keep stirring and chop the onions. Add the onions to the potatoes after 15 mins and fry until onions are soft. In the meantime break the eggs in a bowl and beat well. Add salt and beat one more time. Drain the fried potatoes and onions and cook them. Set the fried oil aside. In the bowl bring the fried potatoes to the eggs and mix well. To the pan add a little oil and pour the mix. Stir and keep seeing that the eggs is juicy enough to cover the whole pan. Fry for 10 mins on one side. Set aside and flip. Re add the tortilla to the pan and fry for 5 mins. Set aside. Cut into slices and enjoy hot
