Mutton Ghee Roast

From childhood Roast to me was always chicken and I loved it so much. But the day I made Mutton Ghee Roast, I’m in two minds whether to love Mutton only or both or go back to Chicken. Succulent mutton and the aroma of curry leaves, fenugreek and coriander leaves raised it to a different level. I’m in love with Mutton Ghee Roast. Here goes the recipe and you will know why I love it so much

Serves -2 people

Preparation time -25 mins, Cooking time -20 mins

Ingredients

For marination

250 gms mutton on bones

1 Tbsp red chilli powder

Salt to taste

For Roast

1 bay leaf

1 whole red chilli

1 Tbsp red chilli powder

1/2 tsp turmeric powder

1 tsp coriander powder

1/2 tsp cumin seeds

1/2 tsp garam masala powder

6 Tbsp ghee

1 Tbsp mustard oil

Salt as per taste

Sprigs of coriander leaves

Sprigs of fenugreek leaves

Sprigs or curry leaves

Method

In a bowl add the mutton and marinate with red chilli powder and salt and set it aside for 25 mins. For roast heat the wok and add ghee and oil, cumin seeds and curry leaves, once it splutters add coriander powder, turmeric powder, red chilli powder, bay leaf, garam masala powder. Stir. Add mutton and stir very well. Add chopped coriander leaves, fenugreek leaves. Keep it low flame and cook covered. Serve hot with Naan or Roti or Paratha
