Doodh Pitha in Bihari style

Pitha or Indian name for dumpling is very different in make, style, flavour. The world might have had the sushi kind of dumpling since many years ago but Pitha is more common in Eastern part of India. Bihar, Jharkhand, Odisha, West Bengal, Assam have all different ways of making Pitha from rice which is the base. Today I’m sharing Doodhi Pitha or Dumpling in Milk sauce. A unique recipe from Bihar

Preparation time -25 mins, Cooking time -30 mins

Ingredients

1 Ltr milk

250 gms rice flour

1 cup khoya

5-6 raisins

2 Tbsp sugar

1 cup desiccated coconut

1/2 cup sugar

Almonds and pistachios chopped to garnish

Method

In a pan heat milk on one side and in another pan heat 1 cup water and add little salt. Add rice flour. Stir for couple of minutes and set aside. Make a dough and divide into 6 equal size balls. In a bowl add khoya, raisins, sugar and desiccated coconut and mix well. Take the balls and make a hollow structure circular in shape and add the coconut filling. Close the edges and set aside after completing the batch. Add these stuffed balls into the milk and slow cook on low flame for 15 mins. Take out the balls and add sugar. Keep stirring the milk until it’s thick. Re-add thr balls and serve after garnishing with chopped almonds and pistachios
