I love one pot meals. They are quick to make, healthy generally and delicious to taste. Today after enjoying a decadent chocolate cake I thought of having a healthy one pot meal. What better way than to make with millers and that too in Mediterranean style which all across the world is known for its healthy food. #MadhusKitchen #foodie

Ingredients
1 cup Millet
2 cups water
3-4 mushrooms halved
1 garlic pod chopped fine
1 Tbsp olive oil
1 boiled egg sliced
Few sprigs parsley leaves
1 lemon juice
1 lemon zest
Method
In a bowl add water and millet and bring it to boil on low flame with cover. After 20 mins the millet should be cooked. If any water is there drain and set aside. In a non stick pan add olive oil, heat and add chopped garlic. Fry for a minute and add mushrooms. Fry on low flame until releases moisture. Set aside. To the millet, add chopped parsley, fried mushrooms, lemon zest, lemon juice, salt and black pepper powder, olive oil and sliced eggs. Stir and serve hot
