Lemon Rice is a very easy and often cooked in South Indian families home. It’s a one pot comfort meal and has many different flavours, the most predominant being lime. I had it in South India in Chennai then Madras and loved it. I’ve had it during breakfast, lunch and dinner and each time when I had I enjoyed it. Today after a long gap I thought of preparing Lemon Rice

Ingredients
1.5 cup basmati rice
1 Tbsp Chana Dal
1 Tbsp Urad Dal
Pinch of asafoetida
1/2 tsp mustard seeds
Few sprigs of curry leaves
Few sprigs of coriander leaves
1/2 tsp turmeric powder
1-2 green chillies chopped fine
1 tsp ginger-garlic paste
1-2 whole red chilli
1 tsp cashew nuts
1 tsp peanuts
1 lime juice
Oil
Salt as per taste
Method
In a bowl boil water and add washed basmati rice, make 3/4th boiled, drain and set aside. In a wok heat oil and add mustard seeds, when it splutters add curry leaves, chopped green chillies and when it splutters add Chana Dal, Urad Dal and stir for 2-3 mins. Add asafoetida, whole red chillies, chopped coriander leaves, ginger-garlic paste, cashew nuts, peanuts, turmeric powder and stir for 2-3 mins. Add rice and stir, add lime juice, salt and stir well. Garnish with chopped coriander leaves and enjoy hot with yogurt, mango pickle and lime wedges
