Karele Pulao / Bitter Gourd Pilaf

Karele or Bitter Gourd may prove to be true to its name but healthwise it has lot of benefits. Bengali people use Karele or Uche or Korola in innumerable ways primarily by preparing Shukto which is my favourite. Today for lunch I thought of making something different and prepared Pulao or Pilaf. It was so good to taste #foodie #thekolkatabuzz #MadhusKitchen

Serves -2 people

Preparation time -10 mins, Cooking time -25 mins

Ingredients

1 cup Basmati Rice

3-4 medium size Kareles washed, peeled and cut small pieces

1 medium size tomato chopped

1-2 green chillies chopped

1 medium size onion chopped fine

1/2 tsp cumin seeds

1 whole red chilli

Mustard oil

Salt as per taste

Method

Wash the rice and in a heavy bottomed bowl boil water and boil the rice. Make 3/4th, drain and set aside. In a wok heat mustard oil, add cumin seeds and whole red chilli. When it splutters add chopped onions, chopped green chillies and chopped tomatoes, stir for 2-3 mins. Add chopped karelas and stir for 3-4 mins, add rice and salt and stir well. Mix all spices well. Serve hot 😊
