Mushroom Soup

Mushroom is one of my favourite ingredient to cook with. I can have it with any dish and anytime, I love mushrooms so much. Today I felt like having Soup for dinner and so I did. What a great dinner it was for me. A fulfilling, comfort food and I relished it #foodie #thekolkatabuzz #MadhusKitchen

Serves -2 people

Preparation time-10 mins, Cooking time-15 mins

Ingredients

300 ml milk

3-4 button mushrooms cut and some more chopped fine

2-3 cloves

2-3 whole pepper

1 bay leaf

2 Tbsp cream and some more to garnish

1/2 tsp white pepper powder

1/2 tsp nutmeg powder

1 Tbsp Maida

1 medium onion chopped fine

2 Tbsp butter

Method

Heat the milk in a bowl and add bay leaf, whole pepper and cloves. Once it boils set aside and keep warm. Drain the bay leaf, cloves and peppercorn. In a wok heat butter and add chopped onions and chopped mushroom and cook till mushrooms are soft. Add Maida and keep stirring so that it doesn’t brown. Add the milk but slowly and keep stirring also. Cool the milk. Purée and ensure the consistency is thick. Bring back the purée to heat and add salt, white pepper powder, nutmeg powder and drizzle cream. Set aside and add cut mushrooms and drizzle cream and enjoy hot
