Navroz is today and I thought of preparing Parsi style cuisine for the entire day. I started with Akuri for breakfast followed by Berry Pulao & Patrani Machi for lunch. Loved every bit of it. Parsi Cuisine is so rich in taste and flavour that I love it. If someone has visited a Parsi Home during their festivals then one has had the best of their cuisine. Ingredients
2 eggs
1 medium size onion chopped fine
1 medium size tomato chopped fine
2-3 green chillies chopped fine
1/2 tsp ginger-garlic paste
1/4 cup chopped coriander
Ghee
Salt as per taste
Method
In a pan heat ghee and add chopped onions, till it turns translucent, add ginger garlic paste, stir. Add chopped tomatoes and add salt so that tomatoes becomes mushy quickly. Add chopped coriander leaves. Give it one stir and break the eggs on to a bowl and beat it well, add to the mix and keep stirring otherwise it will stick to the pan. When you have the desired consistency, set aside. Enjoy on its own or as a filling for patty or on toast
