My Navroz recipe sharing will not be complete if I don’t share Berry Pulao recipe. Out of all the three recipes of Akuri, Patrani Machhi and Berry Pulao, I prepared, my favourite has been Berry Pulao. It’s a sweet Pulao and I loved it. Ingredients
1.5 cups Basmati rice
1/4 cup mixed berries of blueberry, cranberry, raisins
1 bay leaf
1-2 cloves
2-3 green cardamoms
1” cinnamon stick
1 large onion chopped fine
1 Tbsp cashew nuts
1/2 cup milk
Saffron strands
1” ginger chopped fine
Ghee
Oil
Salt as per taste
Method
In a wok heat oil and add chopped onions and chopped ginger and fry until translucent. Add mixed berries and fry for 2-3 mins. Set aside. In a heavy rimmed wok boil water and add bay leaf, cinnamon, green cardamoms and cloves. Add rice and cook until 3/4th done. Drain and set aside. Mix the saffron strands to the milk and keep it aside. In a wok heat oil and ghee and add mixed berries, add one ladle of rice and one Tbsp of milk with saffron. Repeat the process for two more layers. Garnish with cashews. On low flame, cover and cook for 10 mins. Set aside and enjoy hot
