Mujadara is a very simple, one pot meal of Saudi Arabia and I fell in love with the recipe when I heard from a food consultant friend. So tasty and so simple to make. It has various names depending on which part of Saudi Arabia one visits but it’s sure a keepsake. It can be tasted with yogurt, with Tahini, Falafel or Mediterranean Feta Salad. I enjoyed with yogurt as I love yogurt a lot

Ingredients
1 cup Basmati Brown rice
1 cup Green Moong Dal
2 medium size onion chopped fine
1/2 Tbsp black pepper powder
2-3 garlic pods crushed
2 bay leaves
1” cinnamon stick
2 cloves
2 green cardamoms
1/2 cup green onions chopped
1/2 cup mint leaves chopped
1/2 cup coriander leaves chopped
5 cups water
1/2 cup olive oil
Salt as per taste
Method
In a heavy bottomed pan add bay leaves, cardamom, cloves, cinnamon stick and 5 cups water. Bring it to boil and add Rice. Cook covered on low flame. Keep stirring in between for 10 mins. Add green Moong Dal and cook covered on low flame for 20 mins, keep stirring in between. Add salt and black pepper powder and stir. Water should be absorbed completely. Set aside. Crush the garlic pods and discard the cardamoms, cinnamon stick, cloves and bay leaves. In a wok heat olive oil and fry the chopped onions on low flame for 20 mins to caramelise. Set aside. To the rice add the caramelised onions, half of coriander leaves, mint leaves and green onions and fork it. On a plate or a bowl to plate the rice and garnish with rest of green onions, coriander leaves and mint leaves. Enjoy with yogurt or tahini or Mediterranean Feta salad
