Samudri Methi Aloo

For Ganesh Chaturthi there is more to Modak and I made Samudri Methi Aloo which is so tasty, so much so that one can enjoy on its own or have it with Roti or Rice.

Preparation time -15 mins, Cooking time-10 mins

Ingredients

1 large potato boiled, peeled and cut into small pieces

1 bunch of fenugreek leaves chopped fine

2 green chillies slit

1/2 tsp Rai

1/2 tsp cumin seeds

1/2 tsp turmeric powder

1/2 cup grated coconut

2 Tbsp oil

Salt as per taste

Method

In a wok heat oil and add rai and cumin seeds, when it splutters add turmeric powder. Stir and add cut potatoes. Add chopped fenugreek leaves and stir well. Add slit green chillies, grated coconut and salt and stir for 2-3 mins. Set aside and plate it. Enjoy hot
