Coconut Flour Pancakes

I love Pancakes and our Indian varieties are to die for. I have started having healthy Pancakes variety and made for breakfast a vegan one from coconut flour

Preparation time -10 mins, Cooking time -10 mins

Ingredients

1 cup coconut flour

3 eggs

1 Tbsp olive oil

1 Tbsp maple syrup

1/4 tsp baking powder

1/4 tsp vanilla essence

Salt as per taste

Oil to fry

Method

In a bowl add coconut flour, eggs, baking powder, olive oil, maple syrup, vanilla essence, salt and mix well until no lumps are visible and the batter is a smooth one. Heat a saucepan and add oil, heat and take one ladle of the batter and add to the oil, keep the flame on low and after 3-4 mins flip sides when you notice bubbles are forming. Once the other side is done, set aside. Enjoy with maple syrup and any fruits of your choice
