Dhuska

Dhuska, a very popular street food of Jharkhand state is one of my favourite food from Jharkhand state. This is no only popular as a street food, it’s also eaten quite regularly amongst people in Jharkhand. A very low carb food and its main base is Chana Dal and Rice. Interestingly I haven’t eaten this dish during my ‘n’ number of visits to various places whether small or big in Jharkhand state yet this is a very popular food of Jharkhand

Ingredients

For Dhuska

2 cups Chana Dal soaked overnight

1 cup rice soaked overnight

2-3 green chillies chopped

1-2 garlic cloves chopped

1 medium size onion chopped fine

1 tsp red chilli powder

1/2 tsp turmeric powder

1 tsp ginger paste

1 sprig coriander leaves chopped

Oil to fry

Salt as per taste

For Rasa Aloo

2-3 medium size potatoes boiled, peeled and cut into 1” pieces

1/2 tsp asafoetida

1/2 tsp cumin seeds

1 tsp coriander powder

1 tsp red chilli powder

1/2 tsp turmeric powder

1-2 green chillies chopped

1 sprig coriander leaves chopped

1/2 tsp ginger paste

Oil

Salt as per taste

Method

To make Dhuska

Soak the Dal and Rice separately overnight and drain and in a blender add them. Add garlic chopped, onion chopped, green chillies chopped and blend. Add ginger to it, coriander leaves and salt and mix very well. Set aside. In a wok heat oil and take a ladle of the batter which should be semi consistency and neither watery nor thick and add to the oil. Fry one side for 2 mins and flip. The centre should swell up but not the sides. Fry for all and set aside.

To make Rasa Aloo

Boil the potatoes, cool and peel. Cut them 1” pieces and in a wok heat oil. Add asafoetida, cumin seeds, when splutters, add the cut potatoes. Stir and add coriander powder, turmeric powder, red chilli powder and ginger paste. Stir well. Add salt and stir for 1 min. Add water and when it’s semi curry consistency add chopped coriander leaves and set aside. Enjoy
