Tomato Soup is my favourite soup and amongst many kinds I enjoy, back of my mind I will always would think Tomato Soup is for me …haha!!! This is me…. this Tomato Soup is with garlic and basil. Very smooth texture and ideal for autumn weather of Kolkata.

Ingredients
3-4 Ripe tomatoes chopped
1 Tbsp butter
2-3 garlic cloves chopped
1 Tbsp olive oil
1 onion chopped fine
2 cups vegetable stock
1 cup white wine
1 Tbsp sun dried tomatoes
1 Tbsp basil leaves
1/3 cup cream
Black pepper powder
Salt as per taste
Basil leaves to garnish
Method
Heat oil and add butter. Add onion and garlic and cook gently for 5 minutes stirring frequently. Don’t brown. Stir in the chopped tomatoes and add garlic and the stock, white wine, sun dried tomatoes with salt and pepper. Bring to boil and stir. Low the flame and half cover let it simmer for 20 mins. In between keep stirring. Process the soup with basil in a blender and press through a sieve into a clean pan. Add the cream and heat through stirring. Taste for seasoning. Pour into serving bowls and garnish with basil leaves.
