I love making Tikki and both vegetarian and non vegetarian kinds. Usually I make every week and yesterday I felt like making a vegetarian one. So I indulged in choosing the main ingredients and chose Oats, Paneer or Cottage Cheese and Palak or Spinach. Now that’s being healthy – isn’t it? So here goes the recipe

Ingredients
3 bread slices for breadcrumbs
3 bread slices cut into roundels
3 cabbage leaves cut into roundels
3 cheese slices cut into roundels
Butter to smear the breads
1 cup baby spinach blanched
1/2 cup oats
1/2 paneer grated
1/2 tsp red chilli powder
1/2 tsp Aamchur powder
1/2 tsp Chaat Masala powder
1 tomato sliced
Few coriander leaves
Few mint leaves
Salt as per taste
Oil to fry tikkis
Few toothpicks
Method
Blanch the spinach. In a chopper blend the bread slices to breadcrumbs and set aside. Blend the blanched baby spinach. Set aside. In a bowl add blended baby spinach, oats, grated paneer, blended breadcrumbs, Chaat Masala powder, Aamchur powder, red chilli powder, salt and mix well. Roll each small ones, flatten between your palms and make tikkis. Set aside. Smear butter on the bread slices. In a wok heat oil and shallow fry the tikkis on both sides. Set aside. On the bread roundels place cabbage leaf, place a shallow fried Tikki on it, place a cheese slice on it, place a tomato slice on it. Insert a toothpick and insert a mint leaf. Plate and enjoy eating with your favourite beverage
