Pinwheel Samose (Bhakarwadi)

Pinwheel Samose is unique and Bhakarwadi style is truly unique. I love Samose a lot. To be very honest my actual love being a Bengali is Singhara but still Samose is also my love. I have done quite a few Pinwheels and this time a Samose in Bhakarwadi style

Serves -2 people

Ingredients

For Samose

2-3 potatoes boiled

1/2 tsp Aamchur powder

1/2 red chilli powder

1/2 tsp turmeric powder

2 tsp cumin seeds

1 cup All Purpose Flour

Salt

Water to make the dough

Oil to fry

For Garnish

Onion rings, coriander leaves, green & red chilli, lime wedges

Method

In a pressure cooker boil potatoes for 3 whistles. Cool, drain and peel. Mash the potatoes. In a bowl add to the mashed potatoes Aamchur powder, 1 tsp cumin seeds, red chilli powder, turmeric powder, chopped coriander leaves, salt and mix well. Set aside. In a bowl add All Purpose Flour, 1 tsp cumin seeds, salt and make a dough by adding water. The dough should be rested for 15 mins. Make a ball and with a rolling pin make a Paratha. Add the potato mash evenly spread on the Paratha. Add little water on the sides. Gently fold all the sides and fold to make a tight roll. Cut into 1” equal parts. In a bowl make a batter of 1 Tbsp white flour and 2 Tbsp water. Dip the pinwheels into the batter and in a wok heat oil to deep fry. Complete the batch this way. When plating place the pinwheels Samose and add the onion rings, chopped chillies both red and green, lime wedges and coriander leave. Enjoy
