I love Salad a lot and most of the days I have a small portion of a salad before my main dish. Today I prepared after a long gap Grilled Potato Salad having the goodness of bacon, spring onions, a salad dressing of olive oil, apple cider vinegar

Ingredients
4-5 Baby potatoes
5-6 Bacon strips
1/2 cup olive oil plus 3 Tbsp olive oil
Sprigs of parsley leaves
Sprigs of spring onions
1/2 tsp black pepper powder
2-3 garlic cloves chopped
2 Tbsp Apple Cider Vinegar
Salt as per taste
Method
For the dressing add olive oil to a bowl, apple cider vinegar, chopped spring onions, garlic cloves chopped, black pepper powder, salt and whisk well to have a smooth texture. Set aside. Fry the bacon strips. Set aside. Cool and slice. Grill the potatoes for 20 mins, cool and mix to the salad dressing, adding bacon strips and chopped parsley leaves. Serve and enjoy with bread
