Friends, sorry to have missed being in touch with all of you through my recipes and I know you all eagerly wait for my recipes.
Eggplant is very close to my heart and I usually enjoy as grilled or roasted and then mashed adding some spices. I made an appetiser yesterday. Very healthy and very tasty indeed

Ingredients
1 medium size eggplant
1/2 cup pine nuts
1/2 cup olive oil
Some mint leaves chopped and 1 sprig too
1-2 garlic cloves crushed
Method
Wash the Eggplant. Slice around less than 1/2” and set aside. Fork scores on both sides many times and smear with olive oil. In a pan heat olive oil and fry give pine nuts but down brown it. On the grill geese and grill the eggplants. Fold and keep them warm. In a bowl add crushed garlic, pine nuts and olive oil. Drizzle the olive oil dressing, plate and enjoy with a yogurt
