We all have Omelette of various kinds. Some have it regularly for breakfast or maybe some other time of the day. Make no mistake Omelette is my favourite too but I thought why not a Chocolate one. I’ve heard of Chocolate Omelette in France and eaten too, so I had to make one at home. This was the first time and I nailed it completely.

Ingredients
1 egg yolk
2 egg whites
200 gms berries
2 tsp berry preserve
25 gms dark chocolate roughly chopped
1 Tbsp castor sugar plus 2 tsp extra
1 tsp vanilla essence
10 gms unsalted butter
Icing sugar for dusting
Method
Put the berries and berry preserve into a saucepan and cook for 1 min. Once they start puffing, set aside. Melt the chocolate on a heatproof bowl set over a saucepan of barely simmering water ensuring the surface of the water does not touch the bowl. Put the egg yolk, 2 tsp castor sugar and vanilla essence into a bowl and mix together. Stir in the chocolate. In another bowl whisk the egg whites until a stiff peak is there add the remaining castor sugar a little at a time. Fold one quarter of the egg whites into the chocolate to loosen the mixture and then fold the remaining part. Melt the butter in a saucepan and Pre heat the grill. Spoon the chocolate mixture into the pan making sure it’s even layer and cook for 2-3 mins. Then place under the grill to set. Ensure it doesn’t burn. Spoon the berry mixture over one half of the omelette. Fold the omelette over the enclose then filling the dust with icing sugar. Serve hot
