Yesterday, my dinner was special and unique. I had taken a certain liking to Beetroot and hunting a soup recipe I couldn’t help but make this one. Dinner was so fulfilling and with soup I had feta cheese, cherry tomatoes on avocado blanket. Loved and loved every bite I took. Every bite was oozing good health.

Ingredients
Beetroot Yogurt Soup
1 large Beetroot peeled and cut into small pieces
1/2 cup yogurt
1/2 cup milk
1/2 tsp black pepper powder
1 tsp cumin powder
Salt as per taste
For Cherry tomatoes, Feta Cheese on Avocado Blanket
1 cup cherry tomatoes halved
1/2 cup Feta cheese
1/2 Avocado finely sliced
2 Tbsp olive oil
1 lime juice
Salt as per taste

Method
Beetroot Yoghurt Soup
In a blender add Beetroot pieces and blend. Add yogurt and cumin powder, salt and blend well. Add milk slowly until you get the desired consistency. Set aside and garnish with beaten yogurt
Cherry Tomatoes, Feta Cheese in Avocado Blanket
Halve the cherry tomatoes. Coarsely crush the Feta cheese, slice the Avocado fine. In a plate mix the feta cheese and cherry tomatoes and chopped parsley together. Make a dome shape on a plate. Add the sliced avocado on it and plate with a cherry tomato. Drizzle lime juice and olive oil and enjoy a healthy food
