Preparation time -10 mins. Cooking time-15 mins
Ingredients
1 cup Asparagus with heads cut
2 Tbsp peanuts roasted
1 cup Basil chopped
1 tsp chilli flakes
2-3 garlic cloves
1 lime juice
Salt as per taste
Black pepper powder as per taste
3-4 Tbsp olive oil
1/2 cup Spaghetti
Method
For the Pesto
Roast the peanuts in a pan on low flame for 5 mins. Take care not to burn. Keep stirring. Set aside. Keep the heads of asparagus. In a pan heat olive oil and add the asparagus. Fry for 3-4 mins. Set aside. In a blender add asparagus, peanuts, lime juice, garlic cloves, basil leaves, 2 Tbsp olive oil, salt and black pepper powder, chilli flakes. Churn and blend smooth. Blend for few more times until smooth and add olive oil to get a smooth consistency. The Pesto is ready. In a bowl heat water and add a little salt. Add the Spaghetti and cook a’la dante. The water should be absorbed and not drained. Set aside and add the Pesto. Mix well. Plate and enjoy hot
