Suran ki Kachori

Suran or Yam is such a vegetable that you either love or hate. To me it’s love and what’s more I made the Kachori for the first time. Earlier I’ve made only vegetable combining with potatoes but Kachori is a great Appetiser and a Snack too. Post Diwali with all Mithai’s that I made or had this Namkeen was a major hit. Not that I’m complaining about the sweet dishes #MadhubishsKitchen

Ingredients

1 cup Suran

Kachori Masala – 1 Tbsp coriander seeds, 1 Tbsp cumin seeds, 1 Tbsp fennel seeds

2-3 Deghi Mirch

Oil to fry Kachoris

1 Cup Ata or Whole wheat Flour

1 Cup Maida or All Purpose Flour

1/2 tsp carrom seeds

3 Tbsp ghee

Salt as per taste

Method

Wash Suran, peel and cut 1”” pieces. Grease your palm when cutting. Make a coarse masala in mortar & pestle of Coriander seeds, Cumin seeds, Fennel seeds. In a heavy bottomed bowl boil water and add the Suran to boil. Set aside. In a pan heat oil and add deghi Mirch and the suran. Mash and add salt. Stir and set aside. In a bowl add Ata & Maida, carrom seeds, salt and ghee. With adequate water make a dough. Roll out balls, with a rolling pin make small Poori like. Stuff the Suran mix and seal from all sides. Roll out again and complete the batch. In a wok heat oil and deep fry the Kachoris. Set aside on a kitchen towel to absorb the excess oil. Plate and enjoy with fried green chilli
