I love cooking Vegan dishes sometimes. Not that I’m a Vegan but it’s good to change taste sometime. Rice Pudding is always my favourite dessert and traditional Indian dessert is Rice Pudding but if the Rice Pudding could be with Black Rice and use Orange as it’s a fruit in season, then why not. Also instead of milk to use coconut milk and for sweetness Dates. Dates are so full of good health. Ingredients
1/4 cup Black Rice
1/2 cup coconut milk
2 oranges
5-6 Pitted Dates
2 Tbsp Date Syrup
1 Tbsp desiccated coconut
Few pomegranate seeds
1 tsp cardamom powder
Method
In a bowl boil water and add the Black rice. Cook until half done and strain the water. In another bowl add the half cooked rice and add date syrup, pitted dates, cardamom powder and coconut milk and on low flame cook until rice is fully done. set aside and cool completely. Add the oranges, desiccated coconut and pomegranate seeds and enjoy the Pudding hot or cold
