Thepla Quesadillas

Indians from Gujarat state of India eat and enjoy Thepla a lot. It’s such a well known dish that Gujrati’s are synonymous with Thepla. It’s a dish that can be enjoyed on its own, enjoyed with pickles, any dry vegetables. Can be stored for a week without any hassle and can be enjoyed all year through. Of course Gujarat cuisine is very rich and not restricted to Theplas only. I wanted to make a twist and Mexican dish Quesadillas is equally favourite of mine so why not combine both and give a classic fusion. So here it is #MadhubishsKitchen #foodie #foodies

Preparation time-24hrs10 mins, Cooking time-25 mins

Ingredients

For Thepla

1.5 cups Ata or Wheat flour

1 cup Methi leaves or Fenugreek leaves

1 tsp red chilli powder

1/4 cup yoghurt

1 Tbsp oil

Salt

Water as per need

Oil to fry

For Quesadillas

1 cup Rajma or Kidney beans

1” ginger chopped

1 onion chopped fine

1 tomato chopped fine

2-3 green chillies chopped

1 tsp red chilli powder

1/2 tsp coriander powder

1 Tbsp oil

Salt as per taste

1/2 cup grated processed cheese

For Accompaniment

Tomato Salsa

Method

For Thepla

In a bowl add Ata, methi leaves chopped, oil, yoghurt, red chilli powder and salt. Make a dough which should be not very soft. Set aside covering it for 10 mins.

For Quesadillas

Soak the Rajma or kidney beans overnight and pressure cook for 4 whistles on high flame. Set aside. Drain the water and set aside the boiled Rajma. In a wok heat oil and add chopped ginger , chopped green chillies and chopped onions. Cook until softened. Add boiled Rajma, coriander powder, red chilli powder, chopped tomatoes and salt. Cook until all well mixed. Add grated cheese and stir once. Set aside.

Make balls from the dough and roll out with a rolling pin. In a tawa roast the Thepla on both sides. Add 1 Tbsp oil and fry on one side and flip the sides. Complete the batch. Set aside.

To assemble

Place the Rajma on one half of the Thepla and fold. Cut into two and plate. Add salads of roasted Papad, lettuce, chopped red chillies, cucumber and enjoy with Tomato Salsa
