Cong You Bing (Scallion Pancake)

I had Cong You Bing or Scallion Pancakes in Taiwan many times. Students in schools used to invite me to their classes to taste and teachers would encourage me to have. A very delectable cuisine that is loved by many in Taiwan. Some make it from scratch but most buy from stores. They would just bring it to class and heat and enjoy having it. I’m sharing the recipe #MadhubishsKitchen

Serves – 2 people

Preparation time -10 mins, Cooking time-30 mins

Ingredients

For Dough

1 cup All Purpose Flour

Salt

1 cup hot water mixed with 1.5 cups water in room temperature to make the dough

For Scallion

2-3 Scallion stalks chopped

1 Tbsp Sesame oil

Some more Sesame oil to fry

Method

Chop the Scallion stalks and set aside. In a bowl add All Purpose Flour and salt. Mix. Add hot water mixed with water in room temperature and make a soft dough. Keep it covered with a moist cloth for 10 mins. Make 4 Balls. Smear the kitchen top with extra flour and roll the Dough into 1/2” thick ones. Smear the roll with oil and add the chopped scallions stalks. Press with your finger and fold into circus’s from the sides. Tuck the ends at the bottom and roll out again. Set aside. Complete for other balls too. In a pan heat sesame oil and fry the Cong You Bing. Enjoy
