Garlic Soup in Italian style is such a classic soup. I had it cod lunch today. Loved it. The best part is it’s ideal for cold weather, rainy weather and when you feel low. Serves -2 people
Preparation time-5 mins, Cooking time-20 mins
Ingredients
8-10 garlic cloves
1 medium size onion chopped roughly
1/4 cup leeks chopped roughly
4 baby potatoes peeled and cubed of 1”
1/4 cup fresh cream
4 cups chicken stock or any stock
1 tsp dried thyme
1 Tbsp olive oil
Salt as per taste
Black pepper powder
For Croutons
1 slice of bread
1 Tbsp olive oil
Method
Chop all vegetables roughly. In a heavy bottomed pan heat olive oil, add chopped onions and leeks and on low flame cook until softened. Add chopped garlic and potatoes and add stock. On low flame cook until done. Add cream, salt and pepper and stir well. Set aside to cool. Put in a blender and blend smooth. Add chopped parsley.
For Croutons – cut the sides of the bread. Make small 1” cubes. Heat olive oil in a pan and fry till crisp.
Add on to the soup and garnish further with chopped parsley. Enjoy
