Paneer Cucumber Salad

We all know the goodness of Paneer or Indian Cottage cheese and cucumber. When you combine these two main ingredients and make a salad that salad will not only be tasty but full of nutrition and good health. So here it is #MadhubishsKitchen #PaneerCucumberSalad #Salad

1 large cucumber

4-5 paneer cubes

1/4 cup chickpeas soaked overnight and boiled

1/4 cup corn kernels boiled

1 medium size green capsicum cubed

1 medium size carrot cut into small pieces

1 tsp chilli flakes

1 tsp black pepper powder

Few basil leaves chopped fine

1 lime juice or 1 tsp balsamic vinegar

1 Tbsp olive oil

Salt as per taste


Wash the cucumber and in the middle rectangular shape wise cut half carefully so as not to cut right through, take out the cut part and scrape the inside. In a bowl mix all the ingredients for the salad ie paneer, capsicums, carrots, boiled corn kernels, boiler chickpeas, red chilli flakes, black pepper powder, olive oil, salt and toss with lime juice or balsamic vinegar. In the cut cucumber add the salad and plate. Enjoy a healthy anytime salad
