Hibiscus Chutney

The name does sound unusual, right? Well, believe me it sounded unusual to me too but when I made the Chutney, I was lip smacked. I’ve had Hibiscus Tea, Hibiscus Mojito but not Hibiscus Chutney. Just few petals after rinsing and mixing with chopped tomatoes and some spices will give a lip smacking Chutney which can be enjoyed on its own or with any food . Let’s get to the recipe. Serves -2 people

Preparation time -5 mins, Cooking time -15 mins

Ingredients

6 Hibiscus Petals

10-12 garlic cloves

1 tsp roasted sesame seeds

1/2 cup chopped tomatoes

5-6 dried whole red chillies soaked in water for 10 mins

Method

Rinse the petals and add to the blender. Add all ingredients under the ingredients column to the blender and run the blender smooth. Set aside

To give a long shelf life to the Chutney – in a wok heat 1 tsp oil and add the Chutney. Stir for 2-3 mins and the colour will change a little. Add salt and stir. Set aside and enjoy
