On the occasion of World Milk Day my contribution is Lychee Sandesh. We all have milk in some form and enjoy both milk and it’s products. I combined Lychee into it as Lychee in the Indian summers is in season

Ingredients
Chena
1 ltr milk
1 tsp vinegar in 1/4 cup water
Sandesh
8-10 lychees
1 tsp Rose Water
1 Tbsp sugar
1 tsp cardamom powder
Chopped pistachios to garnish and rose petals to sprinkle
Method
Boil on high flame 1 ltr of milk in a wok and stir often. Once boiled switch off the flame. Add vinegar water slowly and stir at the same time. Once milk curdles which should take 3-4 mins pour the curdled milk through a muslin cloth over a strainer on a bowl. Keep the whey aside for future use. When touching is tolerably okay then press the muslin cloth to extract further whey. Put the Chena on a plate and add Rose water, cardamom powder and sugar. Knead with the heel of your palm for 3-4 mins. Make small balls. Peel the lychees and slit to discard the seeds. Add Chena balls and put toothpick. Garnish with chopped pistachios and sprinkle rose petals. Enjoy!
