Dahi Vada is a very popular Indian appetiser. It’s sold as a street food in various parts of India and of course people make it at home. Mangoes being in season and in abundance I chose to make a Mango Dahi Vada and gave a twist to the usual one. It became sweet Mango Dahi Vada and not a complete savoury one. Ingredients
For Vada
1 cup Urad Dal
1/4 cup Moong Dal
1 tsp chopped ginger
2-3 green chillies
Salt
2 cups warm water
2 Tbsp Tamarind Chutney
2 tsp red chilli powder
Salt
Oil to fry
For Mango Curd mix
1.5 cups mango pulp
1/2 cup milk
1 cup yogurt
For Dahi Vada Masala
1/2 tsp Red chilli powder
Black salt
Salt
1/2 tsp roasted cumin powder
Garnish with coriander chutney, tamarind chutney, pomegranate seeds, Dahi Vada Masala
Method
For Dahi Vada – Soak Dals in two separate bowls for 1 hr, strain and add to a blender. Add chopped ginger, green chillies and blend smooth adding little water. You don’t want a running consistency. Set aside . Add salt and whisk well to make fluffy Vadas. In a wok heat oil and take ladle of batter and add to oil. Fry until golden in colour and flip sides, fry and set aside.
In a bowl add warm water, red chilli powder, tamarind chutney, and add the fried vadas after its cooled down and soak for 30 mins. Squeeze water and set aside
For Mango Curd Mix – In a bowl add mango purée, curd, and whisk well, add milk to make a running consistency.
For Assembling – in a plate arrange the Vadas, drizzle mango curd mix, add coriander chutney, tamarind chutney, sprinkle Dahi Vada Masala, pomegranate seeds
